Ingredients
- Lobster (cut into pieces or halved)
- Vegetable oil
- Garlic (finely chopped)
- Ginger (finely chopped)
- Fresh red chilies or chili paste
- Soy sauce
- Oyster sauce (optional, for depth)
- Tomato ketchup or sweet chili sauce (small amount for balance)
- Black pepper
- Sugar (a pinch, to balance heat)
- Spring onion (for garnish)
- Fresh coriander (optional)
- Lemon or lime juice
Instructions
Step 1: Prepare the Lobster
Clean and cut the lobster into manageable pieces. Pat dry.
Step 2: Light Pre-Cook (Optional)
Quickly boil or steam lobster for 3–4 minutes until partially cooked. Set aside.
Step 3: Aromatic Base
Heat oil in a wok or large pan over high heat. Add garlic, ginger, and chilies. Stir-fry quickly until fragrant.
Step 4: Make the Sauce
Add soy sauce, oyster sauce (if using), ketchup or sweet chili sauce, black pepper, and a pinch of sugar. Stir well.
Step 5: Cook Lobster
Add lobster pieces and toss in the sauce. Stir-fry for 4–6 minutes until fully cooked and coated.
Step 6: Finish
Add a squeeze of lemon or lime juice and mix well.
Step 7: Serve
Garnish with spring onion and coriander. Serve hot with steamed rice or noodles.
