- Prawns (cleaned and deveined)
- Coconut milk

Instructions
Step 1: Sauté Aromatics
Heat oil in a pan over medium heat. Add garlic, ginger, onion, and chili. Sauté until fragrant and lightly golden.
Step 2: Build the Base
Pour in coconut milk and stir well. Let it simmer gently for 3–5 minutes so flavors combine.
Step 3: Season the Sauce
Add a small amount of fish sauce or soy sauce, salt, and black pepper. Adjust taste carefully.
Step 4: Cook the Prawns
Add prawns and cook for 2–3 minutes, until they turn pink and are just cooked through.
Step 5: Finish with Citrus
Add lime juice and optional zest. Stir gently to brighten the flavor.
Step 6: Serve
Garnish with fresh coriander and spring onion. Serve hot with steamed rice or noodles.
Notes
- Coconut milk adds creaminess without dairy.
- Do not overcook prawns—remove from heat as soon as they turn pink.
- Lime juice should be added at the end to keep flavor fresh.
